With all the upgrades that I had from version 3 to 5.5 (been with Logic that
long!), there was always a document from Emagic detailing all the changes
and improvements with each new release. Do similar documents exist for the
5.5 to 7.n trail?

Why's that? I thought Macs in general were designed to use only one button,
and Logic also?

I didn't clarify that I will be using the Mac for music production only, I
will still keep a Windows PC for office type things, etc.

While it's still perfectly possible to use Macs with a one-button
mouse (Mac laptops still only have one button on the trackpad),
pretty much every OS X application also has some right-click
functionality these days (mostly context menus, occasionally other
things).
You can simulate a right click with Ctrl-click if you only have one
mouse button, but having a "real" right mouse button does make
life
easier.

No, you will be right at home, some menus are in different places,
new software insruments, software instrument implementation is
slightly different.
Ver PC5.5 and Logic 7.x.x are still more alike than different.
Same basic operation.

No. It's the differences between using an application under Windows
or OS X that is not "so big" ;-))
I still think Logic 5.5.1 is an excellent DAW. Some new functions I
use now in 7.x are the Loop Browser and Apple Loops. I also like
Sculpture and Space Designer, but except for that I would be just as
productive in 5.5.1. And also, compared to the modern Logic on my
dual G5 the PC version feels a lot more snappy to work with (doesn't
weight up for Apple Loops though, IMHO)
