I would like to set a reverb setting for one part of the
arrangement using a steinway piano setting.
Then I would like to turn off the reverb on the latter part of
the arrangement. Is there a way to do this thru the audio mixer?
Or is it easier making another piano track using no reberb?

Both ways are suitable. You can do it by automating the reverb bypass, or
you can create 2
different tracks. As far as you use the same piano patches for both tracks,
you don't use
additional RAM for samples.
