It is possible in Logic, but it's not as pretty as you'd like it to be.
Logic can record all his MIDI data simultaneously, but only on one
track. He'll need to do a bit of "cleanup" to get it on multiple
tracks. So he'll need to:
1) Set each MIDI module to a discrete MIDI channel
2) Record all MIDI onto a single MIDI track in Logic
3) Select Region > Split/Demix > Demix by Event channel
So really it requires a fair amount of initial setup (putting every
module on its own MIDI channel) and then one extra step (demixing
everything to a discrete track after recording)--but it shouldn't be
necessary. Ideally, Logic should allow multi-recording of MIDI. The
only problem I see with this is that I'm not sure if it also demixes by
Port in case you use every single MIDI channel on one port.
In other words, since each MIDI port can only handle 16 channels, if
your client records simultaneously using 17 MIDI channels on 2 MIDI IN
ports, you would have a situation where one group of MIDI events would
be on MIDI channel 1, but from Port 1, and another group from MIDI
channel 1, but from Port 2. I'm not sure if Logic would properly Demix
this, or consider both group of events coming from "MIDI channel
1."
OTOH, recording 17+ MIDI channels *simultaneously* is pretty hard core!

Digital Performer handles multi-recording of MIDI just like audio--you
have to record enable MIDI tracks just like audio, and you can
rec-enable as many as you want. I believe that Cubase SX/Nuendo can as
well--its been a while, but I seem to recall the old Cubase VST had a
"multi-record" mode, where you could set up recording of more than
one
MIDI track. If I'm remembering correctly, I'm sure they carried that
forward.

If you can convince your client that he really wants to be making his
sounds from the EXS and other audio instruments, Logic *can*
multi-record AI tracks, so that's another way to go...

You can have it demix on the fly - see "auto demix by channel" in
record options. In practice, this can be more trouble than it's worth
if also audio recording at the same time.

The same channel from different input ports will be irretrievably
merged when they hit the sequencer input.

Not at all. My setup: Drum pads with each pad transmitting on a
different channel (8 channels), plus a controller keyboard addressing
a 16-channel multitimbral synth module (or whatever), with the
keyboard player freely changing channels and issuing bank/program
changes to load and play different patches.
Logic simply cannot record this setup due to the port-merging. I'm
forced to limit the keyboard to 8 channels. Bummer. I'd actually like
to have a TWO 16-channel keyboard/modules set up for fast recording,
AND potentially allow the drumpads separate access to a full 16
channels worth of sounds. 3 x 16 channels...
