You should be able to do this using SCSI Explorer in Adaptec's EZSCSI. The other obvious answer is to temporarily swap the SCSI IDs with another disk to enable you to set ID 14 as say ID 6 and enable write cache and then change back. I am assuming you are using the small utility to do this? If you install EZSCSI (now at version 5), do a custom install and just choose SCSI Explorer and any of the other options you may want to use (you probably do not need DOS drivers for example).
