What I mean is, if I record a guitar track on audio track 1, and then
"record over" it on the same track( meaning I didn't like that
performance,
and rerecord another guitar track) I can't get it to play the new recording,
only the original ( which should be underneath, the new one, right?)
is this more clear? I'm not doing cycle recording or anything like that,
just straight record, stop, rewind record...

I'm not sure how you define "Multiple Takes".
If you want to listen to 2 takes using the same Audio object you have to
mute one of them - an audio object can only play one part at a time.
Is this what you're trying to do?
I'm a Mac user so don't know if this will help:
Options>Settings>Recording>
Then check:
Create TRack in cycle mode
and
AutoMute track in cycle mode
And record using cycle....?
