Joe, you have two options to make this happen, at least I've used these
two.
The first is to create an Environment page that contains
"splitters"
that route each drum to it's own output. I actually made a very nice
one that took about a day to create, it even separated the controller
data to go with certain drums. However, once Roland updated the V-drum
head (the expansion card) they put all the controller data for the
drums onto the same controller number, thus negating the ability to
separate the Snare's data from the Ride's, etc...
The second option which is the option I use now is to choose the "Demix
by event/channel" option from the arrange page (I'm not in front of
Logic at the moment so I don't remember the exact name). This will
separate each drum note and controller data. However you will need to
figure out which Notes go to which drums. There are up to four for the
Hi-Hat and three or four for the Snare and Ride. Thus you need to go
back and glue some of the separations back together. All the controller
data is left on it's own track and I pretty much only end up using it
on the Hi-hat track (which I tend not to quantize) since it's
impossible to tell which bits go to the snare and the ride.
