Hi all. I know this question may seem fairly easy, but I just need
confirmation.
In terms of editing a sample in the EXS Sample Editor, how would I do that?
I have a lot of samples that I would like to make clean (cutting off the
high end).
Also, if I wanted to make samples (for example, recording an audience; car
horn, locomotive engine) for use in music production, how would I make those
sounds a sample so I can make an EXS instrument?

Are you using Express or Pro? AFAIK this is not available in Express, but
fairly straight ahead in Pro.

The question was "Pro" or "Express"? I understood that
you were using Logic 7, but there are 2 versions. The Express version has a
limited version of the EXS24 that doesn't allow you to make your own
instruments, AFAIK.

OK - then Pro will do what you want, but don't have time to describe the
process right now. Check out the manual - "creating EXS 24"
instruments or something of the sort.
