These controller names and numbers are the standard MIDI controllers.
They do not necessarily work on plugin parameters, even if you find
the same names there.

Forget about the names, you are not conrolling a General MIDI device
but individual pieces of software, plugins. Select the track where
your plugin sits. Open the plugin window. Now open the Controller
Assignments and enable the "Learn" button. Move the element in the
plugin window with your mouse, then move a knob or fader on the
keyboard. Disable the learn button.
That way you tell Logic which parameter of which plugin it should
react to which knob. Always on the selected channel. At least I do
not know if the other option, the object number, works properly. If
the plugin does not react or behaves in a weird way, there is nothing
you can do but delete the learned parameter. Logic Express is very
limited in that area.

You find some controller numbers in the plugin reference manual. You
can insert a plugin with known controllers in the selected channel,
program one knob on the keyboard and look if the desired parameter
reacts. If not, you can go to "File >> Song Settings >>
MIDI" and
change the last dropdown menu to "Version 4.x Behavior". If that
doesn't work either - end of my wisdom.
As I said, Logic Express has very limited control capabilities. I
works with a "supported suface" but not very well with other
hardware.
