Abandon the idea that selecting a track assigns midi to play that
track. Like Peter said you can simply cable from the Physical input
to the instrument objects. Tracks are still available for playback of
things if required.
There are two main stratergies to using external program changes to
switch sounds.
1. By inserting a cable switcher between midi input and instruments
and getting it to respond to incoming program changes you can direct
your midi to any connected instrument or instruments you want.
2. By using the "Performance Preset" features Logic has available.
You save a whole channel strip as a preset and these are selectable
via incoming program changes.
For splits and layers use extra midi instruments with key ranges etc
but cable these after the cable switcher. This way you can use both
program change strategies as required.
The environment can become quite busy so take advantage of
environment macros where possible.
Good luck
