I suspect what you're finding out about the humanize function (in Logic or any other program) is that randomizing doesn't take away the mechanical sound quantizing produces. So if like me you can't always play parts in perfectly, what i suggest is tapping in the rhythm of the part or just tapping in some 8ths, 16ths, or whatever you need and using that as a Groove to quantize your parts to. The biggest keyboard buffoon can at least tap in the rhythms fairly accurately and with a good feel, and that will clean up the slop in a performance much more musically. Then if you have unison parts that you don't want too close together, quantize them both/all to your grid, but then humanize one or more of them to create a little bit of controlled imprecision. There are other uses for humanizing, such as creating strummed parts out of perfectly quantized chords, but neither quantizing partway to the grid nor randomizing quantized parts sounds natural. And that's my opinion at all times except when it doesn't apply at all.
