Andy, your firsy copy over of the original VST folder probably
caused some problems as it contained not only the VST instruments
but also the .cfg config files that Logic creates for each VST
instrument & effect.
Might want to uninstall Logic and start from scratch. After
uninstalling logic you may want to delete any Emagic/Logic
references in the registry.
That's the only thing I can think of that would cause this problem.
