The idea is right but you are never going to be able to keep the phase aligned. I suspect you will end up adding noise. There are 3 tools I can think of offhand for this (other than the excellent eq suggestions also posted...and for that, elemental audio makes a great harmonic filter). The first is the noise reduction plugin built into logic which is ok...but not my favorite. The other two tools are sort of what you are talking about, meaning that they take a footprint of the noise and are able to then cancel it. Digidesign makes the DINR plugin, unfortunately for TDM only and very expensive, but I think quite good. What I use is a Sony/Sonic Foundry noise reduction tool in Sound Forge, from what I can gather, is roughly the same as DINR, just not a plugin. I have done noise reduction gigs in the past. If you like, I'd be happy to take a crack at it if you aren't able to treat it with eq in house.
