Hey Kurt, Go to the 'rests' menu at the left side by clicking on the quarter-rest. Got it? Now if you drag that multi-bar rest (looks like an I-beam on its side) into the first bar of many rests, the many bars will condense down to one representative bar and a big number showing how many bars to count, just like in commercial part scores.
