First of all, I doubt there's any difference in latency between using any reasonably fast machine with Gigabit Ethernet as a Node. But regardless, to use Nodes, you would turn on Plug-in Delay Compensation to Audio Tracks and Instruments or ALL anyway, so latency playing back tracks on Nodes wouldn't be an issue regardless of the Mac you use.
