To get more tracks you might have to go into the Audio Hardware Driver page and increase the number where it says "Maximum number of audio tracks". As for seeing iDrum are you looking for it in the instrument menu where there is EXS EVP etc listed? Another thought is it's possible to pass AU validation but still not have the box checked in the AU Manager - in which case it would not be available. Check here also.
