That would mean one MIDI stream would come across Ethernet into something
like iMIDI or one half of the Giga-Teleport thing, the latter of which you
obviously know more than I do.

No, not even from within two or more local MIDI interfaces. Apart from the
fact that with just local interfaces you can always tap single in ports and
colour the data to your liking, or, more generally, send from both keyboards
on different channels.
