noone has mentioned the project manager....... great way to backup a whole project WITHOUT having to do it all manually as the previous people answering this question have suggested. Once youve set it up once you can then use it to backup all your EXS24 settings (including the instruments youve used on the song) and all the other logic plugins and all the audio and MIDI data. The project manager doesnt copy settings for your VST plugins though - but seeing as how thats the only thing you need to backup manually its not really bad. I've got in to the habit of backing up my VST plugins folder periodically (also good if youre taking the project elsewhere and need to use a plugin they dont have) and also my plugin settings folder.
