You have been confunsing velocity with volume. When you have your midi sequence recorded in, open a hyperdraw window. You can enable hyperdraw view in the matrix window if you like. Make sure it is set to display velocity and not volume. Now you will see the velocity events tied to each note. Selecet the first one and hold down the appropriate modifier (I think it is option, if I remember correctly). Then your mouse pointer will pull a "line" out as you move the mouse. Click onn the note you want at the peak of your curve and release the mouse. Logic will now create a linear velocity curve interpolated by each new note on.
