It's all in the Logic4 manual. You'll need to upgrade (might as well upgrade to Logic5). Clues: Shift-Click to select more than one track. Use Environment's Physical Input Object to route different MIDI inputs to different Instruments. Use "zeroeth" MIDI channel (that's the "ALL" MIDI channel) in a Multi-Instrument, and then set the MIDI channel output in the actual keyboards themselves. Then demix by MIDI channel after the recording is made.
