First, there's no way that Logic could ever tell the difference
between one person playing two MIDI keyboards and two people
playing two MIDI keyboards.
It's all in the Logic4 manual. You'll need to upgrade (might as
well upgrade to Logic5).
Clues:
Shift-Click to select more than one track.
Use Environment's Physical Input Object to route different
MIDI inputs to different Instruments.
Use "zeroeth" MIDI channel (that's the "ALL" MIDI
channel)
in a Multi-Instrument, and then set the MIDI channel output
in the actual keyboards themselves. Then demix by MIDI
channel after the recording is made.
Not everything above needs to happen to achieve the desired
result.
