It does. It's just not the fader called "master" but the one
called
"Output 1-2".

You should look at the object whose Cha is set to "Output 1-2".
*That* has the BNCE button on it. Make sure that on Instrument-1 the
output poup is set to "Output 1-2". And in the Bounce dialog,
enter
proper start and end times.
This is totally unrelated to turning MIDI tracks for external synths
into audio btw (which you're talking about in your last paragraph).
