You can open any PlugIn as a non floating (i.e. normal) window by holding command/option while double-clicking the plug entry in the mixer channel. If you then change EXS's Edit view to Controls view, any parameter including instrument-selection can be controlled by +/- keys after first being selected/'highlighted'.
